Cheesy Apple


This is a great recipes for HCG P2... I always make it when I get tired of eating meat, and I can substitute it with the cottage cheese, which is a great source of proteins :)


You will need:

1 apple
1/2 cup of fat free cottage cheese
cinnamon
1 packet of Truvia

Just mix everything together in a bowl! It's yummy and filling too! :D

Cauliflower Pizza



This is a great alternative to the traditional pizza! In this recipe you will not use any flour, cause the "dough" of your pizza is going to be made with cauliflower!

Ingredients:

1 cauliflower head
1 egg
oregano
Shredded mozzarella cheese
Low sugar tomato sauce
And any toppings you would like on your pizza!
1 to prepare the cauliflower, take a fresh cauliflower head and cut the florets of and put them in a microwave safe bowl.
2 DO NOT ADD ANY WATER OR LIQUIDS! put in the microwave on high for 7 minutes, mixing them half the way.
3 with a food processor grind the cauliflower, until it looks like rice.
4 mix the grounded cauliflower, and the egg, for better blending, use a blender.
5 put on loaf pan with parchment paper making sure that it evenly distributed, sprinkle with oregano, and bake at 450F for 20 minutes or until golden brown.
6 if using for sandwiches, let cool down before u
sing, if using for pizza as soon as out of the oven add your pizza toppings and bake until the cheese is melted.
I made half of it with ham for my boyfriend and half of it with eggplants for me :)

Chocolate Delight


Hello World!
Here is another yummy recipe for my HCG and not HCG friends :)

All you need is:

2 Tblsp coconut oil (Unrefined is better)

1 Tblsp unsweetened cocoa (15 calories)

1 packet of Truvia (or Stevia)

1/4 tsp. Agave Nectar (5 calories) (this is for P3)

2 Tblsp water

small container


Start by melting the sugar in the water for 25 seconds in the microwave. In a small container put the cocoa powder and break all the lumps. Then add in the coconut oil, the agave nectar, and finally the water with the sugar. Mix well until smooth and place in the freezer for around 30 minutes. Now you have a delicious low calories chocolate bar! ;) Enjoy! Buon Appetito!

Spinach Chips

If you crave a crunchy snack but you are on a diet and can not cheat, here is a wonderful and light snack idea!

Just preheat your oven at 400 degrees. Place the spinach leaves on a sheet of parchment paper. Sprinkle the spinach with salt, pepper, and any other spice you might like.
Bake for 20 minutes. Your oven will work as a dehydrator, leaving the spinach super crunchy! Enjoy! Buon Appetito! :)

Tiramisu' - A luxurious traditional Italian dessert

An easy and fast, but yet delicious dessert that your family and guests will for sure appreciate!
I am making a lighter version of it, substituting the mascarpone cheese with whipped cream,
but if you would like to switch it back go ahead! :) (Thanks to Luciano, who is like a brother to me, for this recipe! Grazie Luciano!)

What you will need:

-Ingredients:

4 packs of lady fingers
1 brick of heavy cream (400 gr. more or less)
2 Tbsp Kalua
5 eggs
4 Tbsp white sugar
coffee
cocoa powder






-Tools:
hand mixer
3 bowls
pan for Tiramisu'
coffee pot ( I use the Italian Caffettiera)
strainer











First thing to do is making coffee... it needs to cool down a little, otherwise you will burn your fingers later on...
At this point add some sugar and the Kalua to taste and mix it well.













Now you can start to create the super yummy fluffy cream.

Separate the Egg whites in one bowl, and whipped them until they hold stiff. In the second bowl mix the yolks with the sugar until you
will have nice cream. In the third bowl whipped the heavy cream with a little bit of sugar in it.
Now just add the yolks cream to the whipped cram and gently fold in the egg whites. You should get a fluffy mousse like this one :)










It's time to start crating the layers of our tiramisu'!
First of all, spread a base layer of this mousse at the bottom of the pan, then half-dip the lady fingers in the coffe and create the second layer. Yes I said half-dip them, since if you dipped the whole lady finger, your Tiramisu' is going to result soggy, and we don't really want a soggy Tiramisu'! But make sure that
each wet side touches the dry
side of the next lady finger...
Just like this...













Once you've created the lady finger layer, spread another layer of the fluffy mousse and sprinkle some cocoa powder on top of it. Repeat this process until you reach the top of your pan. :)

Your Tiramisu' will look like this

Now you can cover it with some aluminum foil and refrigerate it for 2-3 hours b
efore serving.
