For the winter season there is nothing more comforting than a nice warm beef stew. Which is also one of my favorite winter dishes.
Ingredients:
Beef chunks for stew (I used 2 Lbs)
4 potatoes
2 or 3 carrots
Italian parsley
onions
red wine
extra virgin olive oil
Tomato paste
salt and pepper
Start by rolling the meat in some flour and just lightly brown it in a skillet. In your crock pot pour some extra virgin olive oil, the chopped carrots, potatoes, onions, and parsley. Mix everything well, and then pour the meat on top of the veggies. To finish pour 2 cups of water, 1 cup of red wine and the tomato paste. Give it a good stir and cook it on low for about 7-8 hours. I set mine to cook overnight and this morning when I woke up my wonderful stew was ready! Yummy! Enjoy! Buon appetito!

Supreme Mashed Potatoes
I made mashed potatoes many times cause it is one of my favorite side dish, but this time I wanted to add a few extra ingredients to make it even more yummy!
Ingredients:
4 Large potatoes
Sour cream
Milk
Butter
Salt
Pepper
Start with boiling the potatoes. Drain them and start mashing them when still hot, incorporating the butter immediately.... so that it will melt nicely. Add the milk and the sour cream little by little. Salt and pepper to taste! Sometimes I also add some ham and chives to it! Enjoy! Buon Appetito!

Thai Pineapple Fried Rice
The other night I decided to try one a Thai restaurant by my house I heard a lot about, and I am so glad I went there!!
It really was the best fried rice I have ever had! It had Macademia nuts, bell peppers thinly sliced delicious beef, pineapples chunks, green onions and it was pretty spicy! Sooo good!!! I will definitely try to make it myself with my Wok pan! :)

Eggplant Crostini
As you already know, I love finger food! Here is another recipe I created the other day while looking around my fridge :)
Ingredients:
Melba toast (or any other crostini like cracker)
Cream cheese
Eggplants
I started by coating my eggplant slices with a mixture of olive oil, balsamic vinegar, salt and pepper. Then I grilled them. I put some cream cheese on my toasts and topped each of them with a slice of eggplant. They were delicious!! Enjoy! Buon appetito!

Slow cooked Cranberry Turkey
This year for thanksgiving I wanted to try cooking my turkey in the slow cooker, and I have to say that the result was great! The sweetness of the cranberry and the flavor of the orange was a wonderful match!
What you need:
A small butterball turkey breast
1 can cranberry sauce
1 pack onion soup mix
1/2 cup orange juice
In a bowl mix the cranberry sauce, orange juice and onion soup mix. Pour a little bit of extravirgin olive oil at the bottom of the crock pot. Place your turkey inside the slow cooker and pour the cranberry mixture on top. Cook on low for 7 hours. Enjoy! Buon Appetito!

Biscuit Sandwiches
Turn your biscuits into little sandwiches! This can be a nice snack idea, as well as a nice appetizer!Bake your biscuits following the instructions on your box (or you can even make them from scratch if you have enough time available!). I also sprinkle a pinch of salt and pepper on top of them before baking!
Cut them in 1/2 and spread some butter inside each one. Use your favorite sandwich meat and cheese to stuff them. This time I used Italian Salami, Honey Ham, and sharp Cheddar cheese. Enjoy! Buon Appetito!

Fried Pickles
Here is a southern North American recipe. Fried Pickles!
First you need to slice your pickles (I used the ones pre-sliced in the jar). Beat an egg with some milk, paprika, salt, pepper, and hot pepper. Dip the pickles in the egg batter and then coat them with some breadcrumbs. Fried them until golden brown. Place them on a paper towel sheet to drain the excess oil, sprinkle some salt on top when they are warm. Enjoy! Buon Appetito!

Club Sandwich
This was my first attempt making a club sandwich and I have to say it turned out pretty darn good!
You will need 3 slices of bread. Start by toasting them and spreading a thin layer of mayo on top of the first one. Next place some lettuce, ham and cheese on top of it. Now it's time for the second piece of bread to be places on top , and spread both sides of it with mayo. Put some more lettuce, Salami, cheese and pickles. Finish by placing the third piece of bread on top. Insert 4 toothpicks along the center of each side and cut the sandwich diagonally, forming 4 little triangles. There you have it! A wonderful and yummy club sandwich! Of course you can make many variations to it with your favorite spreads, cheeses and meats! Enjoy! Buon Appetito!

Porcetto Arrosto - Roasted Suckling Pig
Porcetto arrosto is one of the traditional foods that make Sardinian Cuisine popular.

Zucchini Nut Bread
I love this recipe and this year I tried to make it myself and I was very pleased on how it turned out! :)

2 cups Flour
cinnamon
1 Tsp baking soda
pinch of salt
1 Tsp baking powder
3 eggs

1 cup oil
Vanilla extract
1 1/2 cups shredded zucchini
1/2 cup shredded apple
1/2 cup walnuts
1/2 cup coconut flakes
Mix everything in a large bowl, incorporating the zucchini, apple, walnuts and coconut for last.
Bake in preheated oven at 350 F for about 1 hour. Enjoy! Buon Appetito!

Crispy Eggplants - Melanzane Impanate
You will need:
a couple of eggplants (Depending on how many people you are having over)
bread crumbs
a couple of eggs
some flour
Vegetable oil (Or any kind of oil you use to fry)
Cut the eggplant in thin slices. To have a nice breading coat, you will need to dip each slice first in the beaten eggs, secondly in the flour, after again in the eggs, and finally in the bread crumbs. Fry them and place them on some paper towel sheets, so that they will eliminate the excess oil.
Sprinkle some salt on top and enjoy! They are so yummy! Buon Appetito!
PS: you can do the same with zucchini!

Pecan Pie
Happy Thanksgiving to all of you! Today to celebrate this holiday I wanted to show you one of the many delicious things that are going to be part of our thanksgiving super dinner... Pecan Pie! I always bought this delish desserts, but this year I wanted to make it myself and I am very proud of the result!
All you need is:
Pie Crust
1-1/3 cups of Pecans
3/4 cup corn syrup (Light or dark)
1/2 cup packed dark brown sugar
4 Tbsp melted butter
1 Tsp Vanilla extract
3 eggs
Preheat the oven at 425 F and cook the pie crust for 15 minutes, until golden. (Remember to make some holes in the pie crust with the fork, so it wont rise... or if you prefer put some aluminum foil with dry beans)
In the mean time, just mix the rest of the ingredients in a bowl, adding the chopped pecans for last. Pour the mixture in the pie crust and bake at 350 F for 45-50 minutes. Enjoy! Buon Appetito!

Warm Spinach Dip
I am so happy to share with you this great and super easy recipe for a yummy warm spinach dip!
All you need is:

1/2 cup Mayo
1/4 cup Parmesan cheese
1 cup shredded mozzarella
1 pack spinach
In a bowl beat the cream cheese and the mayo. Add Parmesan, spinach and mozzarella.

Phyllo Cups
If you need a great appetizer idea for a party or the holidays, stay tuned for this fancy recipe!
All you need is:
Phyllo cups
Brie cheese
Fig Preserve
Prosciutto
Just place the phyllo cups onto a pan with a baking sheet. Place a piece of brie cheese and a little bit of fig preserve... bake in the oven accordingly to the Phyllo cups instruction box, or until everything starts to melt. Now you could simply place on top pieces of prosciutto and serve, or if you prefer you could toast the prosciutto and then add it to your cups. Enjoy! Buon Appetito!
PS: If you don't find the already made phyllo cups, just buy some phyllo dough sheets and layer them until you create some little cups. Bake them in a muffin pan, so that they will get the cup shape ;)

This delicious recipe is called Sbrisolona, which means crumbly cake in Italian. It's a typical dessert from the north of Italy and this time I wanted to make it with ricotta, nutella, and chocolate chips. Of course you can make variation of it: vanilla custard, fruit jam, berries, etc...
1/2 cup + 2 Tbsp white sugar
7 Tbsp butter
1 egg
1 lemon zest
1 yeast
Mix the flour with the butter (room temperature), sugar, lemon zest, and yeast. Create a crumbly texture and pour half of the crumbles into a greased and floured pan. The rest of the crumbles will serve as the cover layer for our cake.

Chocolate chips
sugar powder to decorate
In one bowl mix the ricotta with the sugar. Now separate the ricotta in 2 bowl. In one bowl mix the ricotta with nutella (As much as you like). So you will have two different color layers... I put too much of the ricotta and nutella and you can barely see the white ricotta with chocolate chips :) As a final top layer you will have the crumbles. Peanut Butter & Jelly Fritters
This is a very fun way to make your usual Peanut Butter and jelly sandwich. You will need some white or whole wheat sandwich bread, Peanut butter, jelly and vegetable oil to fry. Just make some rounds out of the sliced bread. Spread some Peanut butter and jelly on top, leaving some space from the edges. Place another slice of bread on top and pinch firmly with your fingers, sealing the 2 bread slices. Now fry the until golden brown. Drain them on some paper towel sheets and sprinkle with some powder sugar on top. Enjoy! Buon Appetito!

Ciambella
Ciambella is a traditional Italian Ring cake that can be made in a variety of ways: yogurt, chocolate chips, ricotta, and so on. This is a picture of a simple and basic ciambella that was taken in Sardinia, Italy, and this wonderful masterpiece was made by Inna! Thank you Inna!
Ingredients:
2 eggs
1/2 cup white sugar (150 gr.)
1 cup flour (300 gr.)
1 glass of milk
1 glass of vegetable oil
1 lemon zest
1 packet of yeast
Mix everything together working the batter until smooth. Pour the batter in a greased and floured pan, and bake for 30 minutes at 340 degrees.

Slow cooked BBQ Pulled Pork
Last night I was very excited of trying my new Crock pot for the first time! I wanted to try the recipe for the BBQ Pulled pork I fell in love with during my trip to Birmingham (Alabama).
What I used was:
Pork tenderloin, Salt, pepper, onions, a little bit of extra vergin olive oil and Sweet Baby Ray's BBQ sauce.
Just place a little bit of olive oil in the crock pot and some onions. Rub your pork with salt pepper and BBQ sauce. Place the pork in the Crock pot and top it with some more onions and BBQ Sauce. Cook on low for 6-7 hours.
I came back home from class and smelled this wonderful aroma of BBQ Pork! I love my crock pot! It's like somebody is cooking for me while I am away! I made some potato rolls sandwiches with it, and also some lettuce wraps topped with mozzarella cheese... delicious! Enjoy! Buon Appetito!

Garlic & Cheese Biscuit-Burgers
When I don't know what to cook for dinner, I start to open my pantry and look around, hoping to find some inspiration. That is how I came up with this delicious recipe! I had a bag of Betty Crocker Garlic and cheese biscuits mix, some ground beef, lettuce, and bacon. So I started by baking the biscuits. While they were cooling down for a couple of minutes, I cooked the seasoned mini beef patties with chili powder, salt, pepper, and oregano. Then I grilled the bacon too. After preparing my stuffing on the side, I cut the biscuits in half and started layering them inside. First a layer of mayo, a piece of lettuce, the burger, a piece of cheese, 1 pickle, the bacon, mustard, and ketchup. They were so yummy! Enjoy! Buon Appetito!

Crostata di Frutta - Fruit Pie
Ciao Everybody!
I wanted to share with you one of my favorite Italian desserts... Crostata di frutta, or fruit pie in English. This is a perfect summer desserts since it's served cold right out of the fridge! Yummy!
Ingredients for Pie crust:
1-1/4 cup of flour
1/2 cup white sugar (150 gr.)
1/2 cup powder sugar
3 yolks
2 tbsp cold water
1 Tbsp vanilla extract
Mix everything together and when you form a nice ball of dough place some plastic wrap around it and let it cool in the fridge for about 30 minutes.
When the dough has cooled down, roll it and cover the whole surface of a pie pan.
Bake in the oven for 20 minutes at 350 degrees.
Ingredients for the custard (Crema pasticcera):
4 yolks
1/2 liter of milk
2/3 cup of white sugar
1/4 cup flour
Lemon zest
Lemon zest
1 tsp Vanilla extract
Bring the milk and the vanilla to a boil. In a separate bowl beat the yolks with the flour and the sugar until smooth. Pour the yolks cream into the boiling milk and continue stirring until it reaches the desired consistency. Set the custard aside and let it cool down.
Once cool, pour the custard into the pie crust and start decorating with the fruits that you've picked for your pie.... you can chose whatever you like! As you can see this time I used: kiwi, Maraschino cherries, peaches, strawberries, bananas.
To get a shiny look for your pie, get a bag of gelatin for pies, follow the instructions on the bag and pour it right on top... it will prevent the fruit to get brown and it will give it a yummy and shiny look! Enjoy!! Buon Appetito! :D

Here is a recipes for my HCG friends and non... this recipe is actually delicious even when you are off the maintenance of your diet!
In a pan sautee olive oil, onions and chicken cut in chunks... keep on until everything starts to brown. Now add the mushrooms. Cook until everything starts to get a nice brownish color. Adjust salt and pepper. Turn off the stove and add 2 Tbsp of sour cream. Here you have it! A fast and delicious recipe! Of course when you are off your diet you are more than welcome to add some pasta to this dish! Enjoy! Buon Appetito!

Pasta alla Carbonara
Start to sautee the olive oil with onions and the pancetta (I used 4-5 thick slices cut in little cubes, until golden brown.
Cook the package of pasta. In a bowl beat 4 eggs, Parmesan cheese, salt, pepper, and a tbsp of milk. When the pasta is ready, throw it in the pan where the pancetta is and mix everything over low heat. Pour the egg batter over pasta and remove from heat. Don't let it cook too long, otherwise instead of a creamy texture you will have scrambled eggs! :)
Sprinkle some more Parmesan on top and serve with love ;)

Torta di Mele - Apple Cake
Yesterday I made one of the most delicious apple cake ever! Thanks to my BFF Lilli and her mamy for this amazing recipe!
Ingredients:
2 large apples
120 gr. Flour (1 cup)
200 gr. white Sugar (1 cup)
100 gr. butter ( 7 Tbsp)
3 eggs
120 ml milk (1/2 cup)
1 pack yeast
1 lemon zest
1 dash of vanilla
In a large bowl whip the butter and the sugar, then add the rest of the ingredients, leaving the eggs for last and adding them one by one very slowly. Pour the batter in your cake pan and place the very thinly sliced apple on top and the push them inside the batter. Do this for like 3 layers. It's important that the apple are very thin, in this way they will melt with the batter and they will create like a cream inside! Bake in the oven @ 180 C (350 F) for about 40 minutes or until golden. Enjoy this yummy delicious recipe! Buon Appetito!

Halloween Cake Pops
Since we are in this spooky period of the year I decided to make a Halloween treats. Pumpkin cake pops.
All you need is: Some candy sticks, a cake mix ( I picked the yellow cake mix), a can of frosting, some candy melts.
Just bake your cake according to the directions in the back of the cake mix box (or if you have time you can make it from scratch). Once the cake has cooled down, crumble it and mix it with the frosting, until it becomes a ball. Form you little balls and place in the fridge for 1 hour. Melt you candy melt and dip the tip of each stick before inserting it in the cake ball. Let it harden. The next step is dipping the cake pops and place a jelly bean on top, so that it will look like a stem. Place the in a Styrofoam to dry. If you have some markers you can even draw some faces on them. I suggest to have a cup of this delicious Pumpkin tea along with these cake pops... this tea is so good, when I made it, it smelled like I just made a pumpkin pie! Yummy! Enjoy! Buon Appetito!

Peach Strawberry Cobbler
Here is a very quick and easy recipe for a cobbler that is out of this world! I made it with peaches and strawberries, but you can go crazy with your imagination and use blueberry, blackberry, apple, bananas... anything you like! (Thanks to my friend Vicky that gave me this wonderful recipe!)
1/2 stick of butter
3/4 cup flour
3/4 cup, plus 1 tblsp sugar(to sprinkle on top of mixture before baking)
1/4 tsp salt
1 tsp baking powder
3/4 cup milk
2 heaping cups fruit (peaches, cherries, blueberries, blackberries,
raspberries, strawberries or combination of berries)
Adjust oven to 350 degrees and melt butter in 9x9in glass baking dish.
While butter melts whisk all dry ingredients in mixing bowl, then
whisk in milk. Let stand approximately 3 minutes, or until butter is
melted.
Once butter is melted, pour batter into baking dish, then place fruit
evenly into dish. Sprinkle 1 tblsp sugar on top of mixture. Bake at
350 for 50 minutes or until golden brown.
Serve with Ice Cream and a smile :) ... and share with good friends!

Risotto Bolognese - Rice with Meat Sauce
Here is a quick fix meal that will come handy when you are running out of time. For the risotto bolognese you will need: - Rice for risotto ( Arborio or other kinds) - Ground beef - onion - garlic - tomato sauce - a little bit of butter - a little bit of extra virgin olive oil In a pan, start to sautee the onions, oil, ground beef, garlic. When the beef is half way done, pour some red wine, so that the meat will get a nice flavor. When all the juices are evaporated, pour in your tomato sauce and let it cook for around 5-10 minutes. Adjust with salt and pepper. Boil the rice. When the rice is ready, throw it in the pan where your meat sauce is, along with a piece of butter and Parmesan cheese. The butter will help to get that creamy risotto texture. Enjoy! Buon Appetito!

My Best Cooking Team in Italy
Here is a picture of my last visit back home in Italy. I was with some very special ladies that cook like they have enchanted hands! My Mum is missing from this picture but next time I'll go back I'll make sure to take a good one with her too! She is the greatest cook too! :)

We were preparing a big lunch in occasion of the grape harvest... after everybody finishes working at the vineyard, they come over for a well deserved lunch, which that day consisted of : Homemade gnocchi pasta and ricotta ravioli, Beef, with side salad and of course delicious desserts of all kinds!! Everything paired with a good glass of homemade red wine!

Diet Version of Strawberry Shortcake
Ok so the other day I was watching some youtube videos about strawberry shortcakes, and this one HCG P2 friendly came out! I wanted to share it with you because I tried it and it is delicious!
Slice 8 strawberries and put them in a container with 1 and 1/2 packet of Truvia. Leave them in the fridge for about 15 minutes. In this way the strawberries in contact with the sugar create a yummy juice. After you add the 1 tbs allowed of milk, 2 tbsp of Torani vanilla sugar free syrup and 1 Wasa cracker ( I bought the multi grain one, which is only 45 calories per slice). Mix everything together and Enjoy!!! Buon Appetito!

Dates & Cheese Crostini
I stumbled upon this delicious appetizer during my visit to Amsterdam (Netherlands), and fall in love with it ever since! The combination of the sweetness of the dates along with the saltiness of the cheese is just phenomenal!
Cut a Baguette French bread into slices. Drizzle the bread slices with some extra vergin olive oil. Top the bread with dates, cut in 1/2, and finally place a piece of Brie cheese inside each date. You could also use any other kind of cheese if you prefer. Bake in the oven at 450 degrees for about 10-15 minutes. Enjoy! Buon Appetito!

Organic Chai Tea
This is one of my favorite tea of the moment! It's from Tazo and the flavor is so rich, it will make your whole house smell good! It is even better with 1 Tbsp of milk in it! Yummy! Enjoy!

Ruioli - Sweet Ricotta Balls
To make the Ruioli you will need:
500 gr. ricotta cheese (16 Oz.)
1 grated orange skin
3 Tbsp white sugar
3 eggs
2-3 Tbsp flour
Vegetable oil to fry
Drain your ricotta cheese very well. Then mix everything together. The mix will result very soft. Just form little balls and fry them. Place the fried balls on paper towel sheets to drain. Drizzle with honey and serve warm! Enjoy! Buon appetito!

Since I have recipes from all over the world, it is hard to keep up with measurements that sometimes are in cups or in Grams.... even for the oven temperature that in some recipes could be in Celsius and in other could be in Fahreneit. This is why I decided to post these tables that could be very useful to you!
